SRM 1-2, very pale straw and almost clear. A half-inch, fluffy white head slowly drops to a quarter of an inch, leaving a dense coating of lace on a Pretentious Beer Glass Company pub pint. Fine bubbles appear about half way up within the glass and race to the top. After drinking about half the glass, I added the late addition of the last half ounce, which transformed the beer to a similar haze as one might expect from a wheat beer.
All of the aromas are delicate. They begin with lemon pith and white bread. Clove adds a very subtle and crisp touch.
The flavor is also clean and crisp, with very low bitterness for an IPA. The beer is still balanced, and it is easy to understand how dryness adds "Brut" to the IPA pantheon. Crackers and subtle lemon pith hold this one short of an acrid burst that gives way to long, dry, lemon finish. Warmth adds a big surprise to the progressiveness of flavors. Clarity of appearance and flavors are marked and some lemongrass is added. The beer is much, much tastier at about 60 degrees. I am also noticing some coriander and possibly mint. The flavor is very different, yet clearly a progression from the first sip.
The body is light to thin with a silky texture. The texture is very, very fine and alcohol is about as expected. This beer is effervescent, yet far from what I had expected.
This beer is definitely more suited to a warm, sunny afternoon than to a cold Autumn day when I tried it. I am curious to see if this style will last and how it develops. In my opinion, Brut IPA is far more interesting and drinkable than a session IPA, even though the alcohol content is much higher.
