Ella is from our Saison Solera project. This beer is a blend of older and newer batches, aged in Chardonnay barrels with Brettanomyces.
The name is an homage to our Granddaughter, who we often refer to as having a lot of that "Brett" Character. You know what we are talking about... funky, unpredictable, ornery.
Another beer in our Pandemonium Barrel Age Series.

500ml bottle. No dating information found.
Cloudy, deep gold colored body. Fizzy white colored head immediately disappears within seconds of the pour. Rising bubbles try to create an interrupted ring. No lacing.
Aroma of funk, oak, lemon, and apricot. Funk is leather and grass.
Taste is rather strong - sweet, funk, fruity, and earthy. Flavors of lemongrass, apricot, peach, oak, leather, and a touch of black pepper. Aftertaste mellows towards the sweeter fruits.
More than medium mouthfeel. Low bitterness. Enough tartness to get to a dry finish. Supportive carbonation.
Based on other reviews, probably at least a couple of years in the bottle, but the brew holds up and expresses funk and fruit.
