Pours a hazy copper color. 1/4 inch head of an off-white color. Slight retention and poor lacing. Smells of alcohol, wood, bacterial funk, yeast, fruit, and a hint of hop. Fits the style of an American Wild Ale. Mouth feel is sharp and crisp, with an average carbonation level. There is also a dryness and tartness. Tastes of alcohol, wood, bacterial funk, yeast, fruit, and a hint of hop. Overall, carrot is not discernible, weak appearance, complex body but lacking strength.

Strangely opaque burnt orange with a loud bubbly fizz dying to absolutely nothing but a silky smooth surface.

Smell is baked apple, caramelized carrot and sweet potato cut by very sharp, bright acidity and charred oak with a raspberry and bing cherry finish.

Taste is toasty char with sour, peppery acidity, woody grapefruit and faint but not-so-sweet carrot.

Nearing acetic, the body is medium-thin, crisp and super sour with a semi-dry finish.

Excellent lambic, almost gueze-like in flavor. Dry and tart, with a crisp finish. Carrot flavor is very subtle and intriguing. An interesting and original brew.

375 ml bottle into tulip glass, best before 6/23/2026. Pours slightly hazy/cloudy golden orange color with a 1-2 foamy off white head with decent retention, that reduces to a minimal spotty lace cap that lingers. Some clinging bubbles on the glass, with minimal lacing. Good appearance. Aromas of big tart/sour lemon, lime, carrots, green apple, white wine, hay, straw, grass, pepper, oak, musty funk, honey, wheat, and cracker; with lighter notes of vanilla, leather, white vinegar, and yeast/oak earthiness. Damn nice aromas with great balance and complexity of fruity/funky/acidic yeast, carrots, oak, and pale malt notes; with great strength. Taste big tart/sour lemon, lime, carrots, green apple, white wine, hay, straw, grass, pepper, oak, musty funk, honey, wheat, and cracker; with lighter notes of vanilla, leather, white vinegar, and yeast/oak earthiness. Moderate lactic tart/sourness and yeast/oak spiciness on the finish. Lingering notes of tart/sour lemon, lime, carrots, green apple, white wine, hay, straw, grass, pepper, oak, musty funk, honey, wheat, cracker, light leather/vinegar, and yeast/oak earthiness on the finish for a good bit. Great complexity, robustness, and balance of fruity/funky/acidic yeast, carrots, oak, and pale malt flavors; with a great malt/tart/spiciness balance; and zero puckering/astringent flavors after the finish. Moderate increasing dryness from tart/sour/spiciness. Medium carbonation and body; with a very smooth, moderately crisp, and bready/grainy/acidic/tannic balanced mouthfeel that is great. Zero warming alcohol for 7.7%. Overall this is a great vegetable lambic style. All around great complexity, robustness, and balance of fruity/funky/acidic yeast, carrots, oak, and pale malt flavors; very smooth, crisp, and easy to drink with the modestly lactic/tannic/drying finish. Nice well rounded Brett/Lacto complexity, oak presence, and malt backbone. Classic lambic flavors with the addition of earthy tasting carrot notes that aren't overdone. Not overly lactic with plenty of Brett funk. A very enjoyable offering, and spot on style example.

375 ml bottle, 23/06/26 stamped on the bottle cap. Served in a Prairie Teku, the beer pours a hazy golden/orange color with about a half inch off-white head that fizzled away quickly. Not much lacing. The brew smells like carrots, oak, green tea and earthiness. Taste is similar to the aroma, but there's also the addition of some mineral and vinegar flavors. Mouthfeel/body is medium, it's a bit coating with a moderate amount of carbonation. This is a very interesting brew, and one that I'd like to revisit in the future. For the most part I liked it, and at the same time I still really don't know what to think of this. If you like carrots, then give this a try!

this is tremendous beer! I keep doing all i can to source every single one of these, and they just keep coming out, very cool series of beers, one of my favorite series ever actually, and this is a great edition. wild sour beer brewed with carrots in oak. its orange in color, definitely stained by the carrots, but there is almost no head on this at all, totally flat in the glass, although quite clear and shiny, brassy, still pretty but almost lifeless. the carrots are sweet like honey milk, i juice carrots regularly, and i get that same earthy sweetness in both the nose and the flavor here, its pretty incredible how authentic the carrot flavor is, only mikkeller could or would do something like this! lots of carrot in the flavor too, almost snappy crunchy like, and i taste the green tops of the carrots too, very vegetal and green, so delicious. the same wood and funk and sour profile they all have, this one seems to have just a little vinegar edge to it as well. less funky than some of the others, maybe because its still fairly young, but the acidity is bright and tart, and the wood is smoothing and rounding and enriching. i do wish for more carbonation, but its not as flat as it looks, and the acidity helps with that. some high mineral carrot sweetness on the back end. overall an enormously unique and well executed beer. this is why i love mikkeller so much! nothing out there like this at all. carrot lambic, who would have thought...
