amazing to get to drink some baghaven bottles on our trip, and while they are all a little less like lambic than i originally expected, they are are fully wild and super will refined, wonderful quality. this one is done with dandelions and honey i believe, funky and interesting, delicate but quite acidic too, a lucky find at their barcelona location. the first half of the bottle is crystal clear, not quite as carbonated but almost looks like champagne, that light. the second half of the bottle has some sediment, not yucky or anything, but it does lose that shine. the nose is amazing, bitter and herbal right away from the dandelion, no denying its presence here, less objectively floral and sort of polleny and springy as i thought it might be, more bitter. there is some lemon character to the sourness, which is overt, and some oak too, less funk than others, but still some bretty mixed ferm sort of rustic coolness to the ferment. the flavor is all of this, very light mostly pils malt base i think, some light wheat too perhaps, very sharply acidic and more so as it warms, the sourest of these that i had. im pretty sure i remember the bottle saying blend one, which might make it a little older now, perhaps its turned a bit more sour in the bottle than it first was, not over the top or anything, but sour at the expense of funky. the dandelion is there in the taste which is cool, maybe a little sign of the honey but this is crazy dry, wooden, and with a white wine mineral profile and fruitiness late. very good, high carbonation, lovely complexity, and overall an absolute treat to drink on with my wife, even it was quite a lot different than i had it being in my head. seems like the baghaven stuff has all been pretty epic, thankful to have been able to dabble!
