rip baghaven, always wanted to go there, still enamored with the idea of the place and have loved the handful of beers from there that i have been lucky enough to have, this is 2021 vintage, shared generously by a homie, doing great in the bottle after a few years, a blend of rustic saison and lambic, deeper than blonde but short of any copper hues, well refined looking and eager to get out of the bottle, love how well carbonated it is. nose is funky and old, tart and interesting, well made, sturdy and sort of nordic to me, complex but at least knowable if not already known, the lambic part is especially familiar, but there is intrigue here. cedar and hay, wet animal and wet paper, aged hops and serious wood, brett more than bacteria, but definitely multiple fermenting agents at play, hints of white wine, sage leaves, and gooseberry, some wheat heft, some baked heartiness, my kind of drink! the flavor has dried lemon and orange citrus character, an almost lemongrass and chamomile herbal airiness, more lambic than saison, lots of grain but it stays dry, major oak, flattering oxidaiton, modest white wine vinegar pucker at the end, heavier than it looks or than i expected it to be in terms of feel, this is stocky and well built. some terroir in this, a cool little yeasty wrinkle from the saison side of the blend i think is what sets it apart, and the obvious woody maturity. a fun one to share late night with the legends, hope this isnt the last i ever drink from the baghaven location, i have only scratched the surface on these...
