Skins of Life is our collaboration with our friends at Æblerov Cider. We brewed a Danish wild ale with a grist consisting of Danish barley malt, unmalted oats, unmalted spelt, unmalted wheat, raw barley and aged hops. We then cooled the wort and transferred it on top of freshly pressed apple and quince skins used in the production of Æblerov Cider. After 24 hours, a very vigorous natural fermentation from the microbes naturally residing on the skins started. We then transferred the beer into French Oak Chardonnay barrels for the remainder of fermentation and aging. After 12 months, we macerated the beer on top of fresh and juicy French Bergeron and Milord apricots.⠀

Copenhagen 30/5 2020. 75 cl corked bottle from Mikkeller Web-shop. Simple yellow label with a drawing of Baghaven Brewery. The logo of Cider producers Æblerov in a more humble position in the corner of the label.
Pours hazy yellow with a medium-sized, bubbly white head. Settles as thin patch of foam unable to cover the surface of the beer. Substantial lacing.
Aroma is intense with a sweet fruity odor mingling with a stronger, tart sourness. Cider-like, fermented apple, sweet peach and apricot. Tart notes of unripe, sour berries. Vinegary with a touch of funk.
Pretty strong carbonation. Thin, oily, lively, fizzy texture.
Flavor is intense with a medium strong sweetness followed by a stronger, tart sourness. Aftertaste is sour and tart with a lighter fruity sweet undercurrent. Finish is dry.
Nice Sour Beer that combine the fermented sweetness of Cider with the carbonated, sour charm of Champagne.
