Amphora Fermented Danish Wild Ale Aged on Chardonnay Pomace.
In January 2018 we brewed a simple Danish Wild Ale base consisting of Danish barley, wheat and oats and fermented it in our terra cotta amphora. After maturing in the amphora for 8 months, it rested upon lightly pressed Chardonnay grapes from a prominent wine producing region in France before being transferred back to the amphora for a second maturation period.
After Champhora developed the minerality and earthiness found in many natural wines, it was packaged in clear 75 cL bottles in August 2019.

Copenhagen 19/5 2020. 75 cl corked, clear glass bottle from Mikkeller web-shop. Yellow label with a little drawing of the brewhouse.
Pours opaque, golden yellow with medium-sized white head. Disappears more or less after ad couple of minutes leaving only small patches of foam behind. No lacing.
Aroma is intense with a strong, sharp sour odor with vinous notes. Sour unripe gooseberries, citrus and hints of vinegar. White wine-ish sourness. A bit of woody barrel.
Medium strong carbonation. Thin, watery, tingling texture.
Flavor is intense with a moderate sweetness followed by a strong sourness. Aftertaste is sour and lingers for a while. Finish is bone-dry.
Nice, dry, vinous, sour monster which fit a sunny spring day perfectly (a shame it's raining). Always weird with a clear glass bottle and beer. But it is certainly preferable to a Corona.
