Imperial stout aged 33 months in an 18 year old Heaven Hill bourbon barrel.

Motor oil pour - not a single bubble is agitated on the pour. Still liquid from the moment it hit the glass.
Baking cocoa and vanillin with a touch of smoked leather & oaky astringency characterize the nose. Predominantly sweet & dry.
The palate again comes on dry and oak-forward. An underlying roasty acidity frames the mid-palate, while a woody spice,bittering chocolate, and a touch of nuttiness allow the finish to linger with great balance.
Silky smooth, with low, sharp carbonation. The finish is dry and mildly bitter, with comfortable heat.

So smooth. Chocolate, rye whiskey, & Funky oak. Balanced yet very rich; but not overly sweet either.

After VO 16, this is still quite chocolatey, but more of the bitter, freshly roasted cacao variety, while also drier and far more tannin-forward, almost exhibiting merlot qualities.
Then, it converts to espresso-like acids with mature and complex threads of oak vanillin, which grow in delicious intensity over time, as it simultaneously dries up further.
The medium body has a crackly carbonation that comes to a paper dry finish.
