fabulous execution of a style i am really excited about right now. this isnt as wild or funky or brett driven as i thought it might be, but plays well as a table saison, rich in its grain complexion and full of flavor. its hazy and less bright than others, starchy looking, with a rising airy head, insanely active, micro bubbles, looks belgian all the way. aroma is earthy, lightly toasted, with honey and mild spice notes, maybe corn or something in the mash, definitely wheat and rye i would think, some oats too perhaps, this is grain heavy for how low alcohol and pale it is. i love the nuanced malt complexity of this, especially in such a delicate sort of mild beer, really cool. the yeast is belgian-esque, with a little bit of fruitiness to contribute, and it dries the beer out really well without taking over, and i dont end up missing a more wild complexion as much as i thought i might. there is still a mustiness about it, a farmhouse vibe that was unique to many of the dunham saison types, and its awesome with the earthy grain. its carbonated brilliantly, and is bone dry in the finish, layered with cool grain and yeast flavors, and very natural to me, like all of the beer here. really affordable bottles here too at the brewery, incredibly fairly priced. delicious take on one of my new favorite styles, no two are ever alike!
