As brewers, we found that the last little bits of beer left in the tank after dry hopping often had the most intense hop flavor. We collected this ultra-hoppy beer and placed it into bourbon barrels for nearly 7 months, then we dry hopped it again for a blend of intense hop aroma, and a cordial-like malt flavor like no other beer we've ever made.
