Ale aged in maple syrup barrels with sage, fennel, chili pepper and maple syrup.

Split a membership for 2024 and received 2 cans at the AHS Breakfast Party at Mills River on 4-6-24. Canned 3-29-24; consumed can #1 6-6-24.
Beer poured dark brown with a very nice tan head with the original pour-4.5.
Nose is dominated by fennel upon first take which to me comes across as off to the olfactory senses. Almost minty as i am pretty sensitive to strong mint smells-3.5.
Taste is a large malt base that is medium toast. Fennel dominates the initial sips but as i keep sipping the adjuncts are layered in nicely. The maple and chili pepper are subtly played in but am not getting overt sage as the fennel keeps reappearing strongly-4.0.
Mouthfeel is medium bodied and smooth-4.0.
Overall, i suspect the fennel is subtle but to me it is too strong and is a detraction. Nice job by the brewing team nonetheless! 4.0 (3.91 overall)
Having can #2 of 2 on 12-3-25. Been stored at fridge temps since purchase.
Beer poured reddish brown with a very nice off-white head-4.25
Nose is super herbal, a minty fennel, which is offensive to my sense of smell for whatever reason-3.25
Taste initially was fennel forward, then maple forward, with hot pepper heat over a large mildly kilned malt base. Flavors meld as i sip on and comes together much better and in the end is well balanced-4.0.
Mouthfeel is light to medium bodied and kind of smooth. Seems to have thinned out over time-3.5.
Overall, this is my least favorite 2024 AHS release-3.75 (3.74 overall)
