I hadn't heard of Defiant before trying this brew on cask at BoBBiQue. It pours a deep coppery rust color, with a thin yet full white head. Aroma was very sweet, toffee, roast nuts, and caramel.
The taste is just as malty. There's a very big roasted nutty flavor, along with what can be described as toasted marshmallow. Bitterness is very low in this brew, but that doesn't seem to detract from the taste. Mouthfeel is smooth and creamy. It is drinkable, but a bit filling. Seems more like a dessert beer to me, and in my opinion a pretty good one at that. I'm interested in trying more from this brewery based off their Maibock.
