Sampled on bottle at the brewery. Tried this both on tap and from the bottle but this is a bottle review.
Pours a gorgeous orangey-amber color with a huge frothy white head that sticks like cement to the glass.
Smells of big powerful citrus hops. Orange, banana, grapefruit, peach, you name the fruit and I bet you can smell it in there. Also has a belgian feel to it (I later learned they used a belgian yeast strain for carbonation in the bottle).
First thing I noticed was it seemed to be over-carbonated. I could feel bubbles creeping up into my nose as I drank it. With that being said, this is still a great beer. Citrus hops dominate the palate taking you through the full spectrum of fruits. The belgian yeast used during carbonation added a wonderful taste difference to the on-tap version. Definately an abundence of simcoe hops in this brew. Tastes similar to the Wyerbacher Simcoe Double IPA in my opinion.
Overall, a great double IPA. I would have rated this higher if it weren't for the over-carbonation, but I still dig it. They were running low on this last time I was there so get there soon and try it for youself before it's too late. Cheers to Neil and the Defiant staff!!
