A bit of tart, a taste of pear, then quite a bit of all right. Finishes Into a really nice easy to enjoy Saison. Seems like it'd be nice with a homemade pizza - herbs, caramelized onion, maybe a bit of lamb.... Tasted really well balanced and put together. Had a pillowy long-lasting head despite a careful pour, and a dark golden colour. It's dry hopped, but the hops were not overpowering at all.

Appearance: This one is a bit dark for the style, but still pretty light, as is typical of the style.

Smell: I love the funk man, Saisons have become one of my favorite styles lately. I also like that this is somewhat of a hybrid and has some dry hopping going on in production. I do detect the hops, very nice.

Taste: It tastes like a Saison, fruity, funky, earthiness, but then it hits you there are hops here so you get some of that as well. Its got a nice level of bitterness to blend with the funkiness of the Saison. I like this concept! I have had several beers at the brew pub and this one is one of the best ones so far. Although, I did not have this one there.

Overall: I think this is a cool concept and I do like the refreshing taste. Its not too strong in alcohol so you can drink a few of them and you can. I like a flavorful beer that you can drink a few of without being totally hammered and this is in that category. I think this is a limited release so if you see it around grab one or two. They are not particularly cheap, but its a tasty warm weather beer.

Grass and floral scents in a sea of fruity, phenolic yeast aromas. Lightly sweet, fresh bread grains, encroaching bits of crisp acidic lemon, and banana. Flavors are sweet and heavily yeasty with acidic lemon rind bitterness all around. Slight bits of melon funkiness.... Good body, smooth and slick then very dry, and prickly carbonation. This beer is ok but seems overwhelming. Less could be more in this situation.

Hazy golden glow with a modest head of dense and creamy foam. Aroma is a fight between big time yeast and grassy dry hop notes...peppery citrus and banana esters, earthy/herbal hop, and juicy mango blending with a little warm biscuit malt on the back end. More peppery citrus in the mouth, this time backed by more under-ripe tropical fruit, grapefruit zest, and malty sweetness. The yeast seems to be well in control, but the hops are putting up a good fight adding a solid wall of bitterness to the dry finish. Medium bodied, but very creamy in the mouth. An interesting beer...I think the Mosaic doesn't quite express itself like it could and the overall beer would be better with a more subtle use of ingredients. Very flavorful.
