Deep amber body, unfiltered, capped by a sandy head with good retention.
Sweet caramel malt on the nose, syrupy, with a fruitiness like over-ripe apples.
The flavour holds the malty, caramel notes from the aroma in the forefront, but not as sweet, and well balanced by a crisp mouthfeel and mild hop bitterness. In fact the flavour in general is on the light side, making it highly drinkable, but also a touch watery. There's a bit of a syrupy feel. Medium-full body and carbonation. Finish is off-dry with residual sugars.
Paper Chase makes for an accessible, easy drinking summer beer that pairs well with BBQ. Friends that enjoy Creemore or Innis & Gunn might like this.

600 mL bottle from the LCBO; dated Feb 15 2019 and served slightly chilled. Reviewed from notes.
Pours a clear copper-amber colour, capped with an inch of foamy, bubbly, off white-tinged head that recedes over the next five minutes. A frothy collar persists on, but with no other remnants of significance - just some film upon the surface, and maybe a speck of lace here or there. It smells of toasted grains, doughy bread and nuts, with hints of brown sugar and earthy, herbal hops. A tad woodsy too, which I can only attribute to the birch bark.
A well-crafted amber, though I wouldn't necessarily call it a particularly interesting one. The taste follows after the aroma - toasted grains, doughy bread and lightly caramelized malt sweetness are all present, with hints of tree nuts, bark and oatmeal. It finishes with a suggestion of spice, along with an earthy, herbal, slightly dirty hop bitterness that lingers only briefly into the aftertaste. Medium-light in body, with average carbonation levels that briskly agitate the palate. Extremely drinkable - sure. Remarkable? Not so much.
Final Grade: 3.59, a B grade. Beau's Paper Chase was a little underwhelming. The base amber ale is merely ok, and overall there are no major flaws for me to nitpick - there was just nothing about this beer that really stood out to me. That doesn't necessarily make this a bad brew, or even a below average one, but at the end of the day no one wants to pay 8 bucks for a merely average amber more than once. I sure don't plan to.

Appearance - mostly clear light brown color with golden hues. Two fingers of off white head that fizzles out quickly and a soft soapy collar lingers on. Some sticky lacing clings for its life to the edges of the glass.
Smell - clean and grainy with and earthy malt bill, and subtle earthy hop aromas. Some nuttiness of pecans and walnuts mixed in. Not terribly aromatic.
Taste - lots of grain, distinct nuttiness and middling bitterness overridden by caramel sweetness mid sip.
Mouthfeel - medium bodied some dryness to close and soft carbonation.
Overall - solid if unspectacular amber, quite tasty and easy to drink, not exactly the most robust beer out there but worth a try.
