Tikkatee (finish for woodpecker tea) Gruit Ale 6% alc/vol Beau’s Brewery, Vankleek ON.
Tikkatee pours a very fizzy, slightly hazy light golden yellow colour with a quickly disappearing delicate head. It has a flowery herbal nose with some mushroom earthiness. First sip is fairly sour with some herbal and spice zing, followed by some musky notes. Finishes a sour and spritzy.

600 mL bottle from the LCBO; dated Mar 20 2019 and served barely chilled. I've consumed a lot of different beers in my day, but 'mushroom beer' is definitely a new one.
Pours a hazy, translucent goldenrod colour, topped with one finger of foamy white head that settles off within a minute or two. A thin cap and bubbly collar linger on for considerably longer; some lacing would be nice, but I suppose it looks ok. Anyone familiar with the Beau's stable of gruits is liable to recognize that herbal, vaguely mint note of bog myrtle - though that earthy, spicy, woodsy note of chaga mushroom will not be quite so familiar. A bit floral, too, with suggestions of grainy pale malts and orchard fruit.
This one starts off normal by gruit standards, but those 'shrooms start to take the flavour profile in an odd direction, especially on that first sip (which was by far the weirdest, though my taste buds adjusted within another swig or two). Grainy pale malts and herbal, flowery, slightly minty bog myrtle start things off, with hints of apple, apricot and peppercorn leading into an earthy, woodsy, floral finish; subtle notes of green tea leaf bitterness persist into the aftertaste. Medium in body, with spritzy carbonation that exhausts itself quickly, resulting in a smoother, softer, flatter texture as the glass breathes. Despite my initial hesitance, this one actually grew on me quite a bit before I finished the review.
Final Grade: 3.92, a B+. Say what you will about Beau's, you can't say they're not creative. Tikkatee isn't necessarily the most exciting entrant in their Gruit Series, but it's another quality one that I thoroughly enjoyed, and am likely to return to in the near future. it reminds me of their O.G. Gruit, with the mushrooms giving it an earthier, tea-leafy note that actually makes for a very nice accent to this style; I'd recommend this if you have any interest in gruits/herbal beers, or even if you're just a tea drinker.
