Purchased in Quebec in December 2019. Poured from a 500ml Belgian style bottle into an 8 oz goblet shaped glass.
A - Pours a hazy, golden color with a nice white rocky head. Head retention is good, diminishing to a light ring after a few minutes. Decent lacing - nothing extreme in either direction.
S - Very spicy and herbal. Spices include nutmeg and cinnamon, with a grassy, somewhat vanilla smell close behind. Overall very appealing smell, albeit a bit less funky than other saisons that I've had.
T - Little to no malt flavor, and very little traditional hop flavor as well. Has a typical first taste that is spicy, citrus, and pepper - not too dissimilar from other saisons. The difference comes in the mid to aftertaste, which is definitely grassy and herbal, with a bit of cinnamon. It has an almost spiced tea quality that flirts awfully close with being medicinal. This is probably due to the bison grass and cinnamon that was added.
F - Highly carbonated and smooth to drink. Not that dissimilar from other saisons in this regard. Very refreshing to drink, although I wouldn't say it's as easy to drink as other saisons I've had.
O - Overall, I'd say this was a really interesting beer, not really like anything else I've had. While it does have some characteristics that are similar to traditional saisons, the addition of bison grass and vanilla/spices makes this quite a bit different. While I enjoyed drinking the beer, its strong taste certainly makes it something that I couldn't drink often or a lot of. Worth a try if you can get it, but I'd say it's really nothing to go far out of your way to try and procure. I will say I feel like this is as beer that if you like it you'll love it, but otherwise it might be a bit too out there for some.
