A blend of mixed culture and spontaneously fermented blonde ales aged in puncheons and wine barrels. Refermented on Sauvignon Blanc grapes and bottle conditioned with wildflower honey.

One time, a long time ago, I had a change to go to Rue Gheude 56, 1070 Anderlecht where I tried many variations of heaven including room temperature gueuze straight from the serving keg. Several with me could not wrap their palate around the true nature of lambic. Me on the other hand, I was in love. (The tour of the brewery was also awesome.) I took several bottles on the rest of our European tour and am glad to say, enjoyed them all.
Sadly to say, I had to come back to the great states where due to liquor laws and distributor dominated geographical areas...was unable to purchase the nectar of the gods in my state of residence (coincidently named after our father of freedom :( ).

Still, our freedom lives on through our small microbreweries. Small enough to fly under the radar of corporate America. Thank God.

A few of these don't follow the beaten path.

This is a beer review and I digress. Perhaps the beer makes it so.

Eric is phenomenal. This Elan Blanc is the closest I've had since visiting Brussels. Sure we cant officially say it's a lambic but it's the closest thing I've had.

I luckily got one bottle for Christmas and the next time I was in Deming, I bought 4 more. Only sold in 350's so it's 2 at a time for me. Wish they were available in 750's.

Two thumbs up for the brewery. Crazy eclectic set of their beers on tap. Go dry, you won't leave that way.

I know this was supposed to be a beer review.

I don't have the skill to properly review a lambic, so here's my best attempt:
Tart, sparkling - mouth feel starts wet and fades to sparkling leaving a refreshing dryness. Crystal clear color of light honey, sides of swirled glass show carbonation bubbles that don't stick but slide back slowly into the beer, eventual small legs seen on glass. Aroma like faint barrel age, somewhat earthy but only to the slightest, no wine but a clean combination of wheat and grape - very subtle. clean, very approachable and fits in with the taste. Refreshing, screams to be drunk and if drank right is the smoothest path to that state.

Oh how I wish this came in 750ml bottles.
