"Brewed strong, bold and sweet with honey malt and maple syrup, then fermented with our jolliest Belgian yeast, this beer then rests in the bright tank with 60 pounds of finely chopped sugar plums until the elves can wait no longer. The resulting elixir arrives onyx in hue with hints of oak and spice and a rich complex cornucopia of cheer for your palate. This is a fruitcake that won't get tossed!"

Poured into tulip...
A: Pours a very dark chocolate brown, almost black body, off white four finger head, very creamy and thick.
S: Sweet candy malt, dried fruits, plums and grapes some bready yeast as well.
T: Heavy dried fruit plum overtone with candy malt, slight acetone and metallic feel as well, finish is bitter and slightly off it seems, almost like they tried to give it a hoppy bitter finish but it just doesn't work. A little tobacco note as well, kind of earthy. Aroma is nice, but the taste is off.
M: Medium body, smooth carbonation, dry finish but off a bit. Abv is hidden well.
D: The finish makes this one hard to get down, just needs balance in the flavor profile...

On draught at Bailey's, North III - Dark Tripel is dark brown with a creamy egg-shell head that leaves gorgeous lace rings.
Smell is very strong, lots of cured fruits and figs (I later was told this was made with sugar plums), some perfume, a touch sour.
Taste is similarly dominated by the sugar plums, acidic but not infected. Flowery, a weird sweetness but not cloying, with a nice minerality. This is very unusual, but I'm not sure how much I actually like it.
Mouthfeel is on the thicker side, but still digestible, with a nice creaminess.
Drinkability is at little tough, as there's just so much going on, not all of which I like, at least they way it comes together. Interesting experiment though, but they could have used another test batch before the commercial release IMHO...
