During a trip to the Hair of the Dog Brewery in Portland, we came across a bounty of Heaven Hills Rye Whiskey barrels delivered straight from Kentucky. We couldn’t resist! A quick brewery tour soon morphed into packing the van with as many of these barrels as we could. Cavatica ended up hanging out in these barrels for six months in the Lovell Building Brewery. While people were playing shuffleboard and tossing bean bags next to the barrels, the Cavatica was soaking up smooth, oak-aged, warming rye whiskey. Can dated 4/7/25
Pours jet black with one finger of foamy head. Nose is dark chocolate, roasted malts, spent coffee grounds. Taste echos the nose and introduces faint notes of vanilla, but the spent coffee grounds lead the taste profile. Mouthfeel is medium bodied, moderate carbonation. Finish is somewhat bitter with coffee notes continuing their journey.

Pours a nearly opaque black with a dense and creamy tan head that goes away. Rye, ethanol, and isopropyl on the nose. Creamy slick medium body with spiciness. Roasty mid palate with brown apples and overripe plums on the mid palate. Long tangy finish. Rated 6-8-2015
