Fresh Hop Hazy Double IPA brewed with our friends at Hop Butcher.
A few months ago we brewed a beer with Hop Butcher at their location in Chicago. We called it Bride of Pierogi, because pierogi is great (and so is the Chucky film franchise). There is no food more versatile or more satisfying than Pierogi. It’s stuff in dough. Pure magic. And so is Fresh Pierogi. Except we swapped the dough for pilsner malt and white wheat, and swapped the potato for Fresh Hops. We poured 600 pounds of Fresh Strata Hops into this Hazy Double IPA.
Pairs best with fresh pierogi, obviously.

Poured from a 16 ounce can dated 9-17-25 into a snifter at 53 degrees.
Look- Straw, very hazy, white sudsy head, average head retention, slightly above average lacing.
Smell- Tangerine, passionfruit, honeydew, bubblegum, between weak and medium strength of scent.
Taste- Honeydew, bubblegum, passionfruit, tangerine, medium strength of flavor.
Feel- Medium body, slightly below average carbonation, low bitterness, moderately prickly, mildly mouth warming, soft, mildly creamy.
Overall- Appearance consisted of a nice straw color and high hazy. The bouquet was a pleasant mix of tropical fruits, but the intensity was on the weaker side. The flavor was more vibrant allowing the tropical fruit flavors, which were well balanced, to shine. The medium body is what I expected for the style. The beer delivered a moderate amount of fresh hop character. Overall the beer was solid all around with the weakest link being the somewhat understated, but pleasant, aromatics.
