Thanks to weeare138 for sharing his growler.
This beer poured a light pale straw with a light film and a collar of off white that left a little lace behind.
Smells strongly of sour grain, pine and a sweet and sour, musky and smoky yeast with a little honey. There also was some strawberry and orange fruity sweetness here to balance things out.
Tasted of sour and spicy yeast with some under ripe melon and a hint of black pepper. Theres also a slight bubblegum with a medicinal sweetness.
The mouthfeel was light to medium bodied with a carbonation that was a little aggressive.
Not too good, and a little confusing at times.

Many thanks to weeare138 for the opportunity to try this beer.
I must admit I am personally not a huge Saison fan but I have had enough to know what they are and this was a decent Saison regardless.
Appearance: Served a clear golden color with active carbonation even in my sample.
Smell: This beer had some of the typical horse blanket barnyard Saison aroma but it seemed to have some crazy wild brett that changed things up a bit. It is also a bit sweeter than the aroma of many Saison with the honey showing through the yeasty bread aroma just slightly. There is also a hint of phenol if you dig for it.
Taste: The taste follows the nose. The beer seemed to have a sweet honey tone with a bit of crazy yeasty flavors a light touch of pepper and a notable phenolic medicinal Robitussin aftertaste.
Mouthfeel: This medium body Saison really seemed to have the right balance of dry and feel and carbonation with enough body to not be overwhelmingly bubbly like many of the style seem to be; IMO.
Drinkability: Overall this is a drinkable beer though not my first choice in style.
Hope this is helpful.
Cheers!

Just pulled from the cellar. Pours nice, medium head. Nice lace. Aroma of bread, low phenolics. Slight warming feeling nice on this cold, rainy day.Half way through I add the sediment and it really wakes up. Gentle phenolics with a nice mouthfeel. The 8%abv is very nicely concealed.

Bottle courtesy of weeare138 (thanks!).
Poured a medium and cloudy golden color with a smaller sized white head. Aromas of citrus, honey, yeast, and leather. Tastes of citrus, yeast, honey, lemons and a little earthiness as well. Light sweet start with a tart finish.

Poured a hazy golden color with a small, white head that left light lacing on the glass. Aroma of citrus, some barnyard, honey, light brett, , earth, and flowers. Taste of light caramel malt, dry yeast, more earth, citrus, and a faint German hoppiness.

Much thanks to grassrootsVT...
According to the brewer, Shaun E. Hill, this was made with 15% wildflower/clove honey, making for a nice spin on a "honey beer" aka biere de miel.
Appears a cloudy gold with a small white cap. Streaks of spotty lacing are left behind in the glass.
Smell is yeasty, bready, honey...outright addictive aroma in my opinion. The Belgian(Chouffe?) yeast plays out nicely in this beer.
Taste is of lemony zest, honey, sweet bready earthiness and perhaps a slight bit of tropical fruit salad buried in there. Mild hoppiness.
Mouthfeel is a strongpoint as well with this beer. Yeasty, medium bodied, bready, semi-dry, and mildly carbonated.
Drinkability is good! It's about time that a U.S. brewery/brewpub gets bold and brews a version of this. Well done!
