collaboration with de garde, two of the absolute best in the business, thought i had missed this one, was overjoyed to find a bottle in a small shop in northern idaho, this has been a long time want! italian white wine foudre, brett and house yeast mixed fermentation saison, super heady! straw colored pour, a little thicker and more sedimented than i thought it would be, but out bottle rolled around in the car a little bit by accident and probably roused some stuff fromthe bottom of the bottle, and its very active, fizzy soda sort of head on it, pure white, replenished constantly by excited carbonation. it smells lemony, real old in a good way, mature on the brett side, that wet animal sort of funk, a little lambic weirdness to it too, there could be raw wheat in this, the white wine is there, tangy and tannic that way with the oak, and i still get some peppery saison yeast esters, slate minerality, wet stone and petrichor, dried flowers, faint iodine, really unique and complex, albeit somewhat subtly. the flavor is righteous too, the grain is starchy and earthen, a wet clay kind of vibe, fading pils malt with fresher wheat it seems, light copper, graham cracker, white bread. there is citrus to this but less acidity than a lot of mixed fermentation brews, way less bacterial. i love the space that leaves for the funk, this really is almost wild ale tasting to me, something slowly developed and weird that makes it majorly original, distinct from other beers from both de garde and de la senne, not even tart, off dry, effervescent and fast, with light spiciness on the finish. really delicious brew, warms up well, and was a treat to get to drink this, worth every penny! i love old funky saisons like this, nothing id rather drink!

Poured at bottle share. Lemon, orange, leather, wheat. Taste is salt, lemon, leather, bitter, wood, and funk. Overall, a great beer. Somewhat dry on the mouthfeel.

Pale gold that becomes pastel yellow as the sediment is kicked up.
Huge billowing head of frothy suds, chunky lace sticking in the glass.
Lemon zest, greek yogurt, brie rind, lactic and citrusy aroma.
Tart and crisp, expressive wild character, lemon, oak, light funk.
Effervescent and zesty, light on the palate and medium bodied.
Ample fine carbonation, smooth supple feel.
