way underrated here, this was one of my favorite beers from our recent visit to the denver location. a clean belgian saison done with house preserved lemons, which come through awesomely in the flavor, make this summery and refreshing and unique, i thought this was really good, even if i prefer my saison a little more rustic and funky, i still really appreciated this beer. mostly clear, a familiar belgian/french type yeast allowed to be estery in the fermentation, but with a dryness that leaves a nice space for the lemons here, which are a touch sweeter than fresh ones, equally distinctive, pungent, and zesty, not quite candied, but with the harsh edges of the natural acidity taken off. the lemon works really well in the flavor with the pear and white wine notes from the yeast, the fresh flower character, and the faster finish, its all synced up really nicely, and this is a seriously crushable beer. carbonation is high, the flavor is interesting and not overly intense or anything, and it has a fairly clean finish. i definitely like a little more grain character in my saison, and i want more wheat here, its a little thin to me. i also like a more interesting yeast complexion, this is pretty straight ahead, but its hard to be critical because overall this tastes really good. i keep really digging the beers in here every time i go in...
