professionally made beer, a spelt saison they say, but i wanted a lot more from this, its too cleaned up and refined, not rustic or interesting enough at all, and not just from the yeast, which worked a lot better in the fly vixen preserved lemon saison (same strain here i am almost certain), but its also boring on the grain side, clean and light, like mostly pils type malt to me, maybe just a pinch of wheat to it, but so cleaned up, not old worldy and agricultural at all to me, and no trace of the spelt to my nose and tongue, which is what sold me the beer from the menu, i thought this would have a lot more grain character than it does, and i am let down by that, even though the beer is well made, i dont love the recipe, its too safe, especially with the spelt. clear and golden brew thats almost entirely yeast driven unfortunately, overly estery on top of such a minimal grain base, it seems exposed, white winey, pear and green apple, but there isnt much balance here, and even though this is light and easy to drink, its not at all what i wanted from it, and next to the fly vixen, its not close, at least for me. nice carbonation makes it really light, but i wish this had more spelt and a different yeast strain...
