Curious about Brettanomyces? With our 7th Anniversary Project we’ve developed a series of 7 unique beers with the same base Saison recipe built with amaranth, lemon grass, grains of paradise, and rose hips. Each individual beer within this series is fermented from start to finish with 100% Brettanomyces and aged on French oak Chardonnay barrels. Each beer within this project is fermented with a single unique Brett, showcasing the dramatic diversity of the organism. Originally called ’Funk Weapon,’ this recipe is a blend of 2 feral Bretts isolated by our friend Jeff Mello at Bootleg Biology. Living up to that name this Brett blend goes very ’funky’ and aromatically musty. The essence of tropical fruit is present in the palate which is balanced nicely by a reminiscent green peppercorn spiciness and an earthy calm finish.

Poured from 330 ml bottle into teku.
A: Cloudy golden yellow with 1-2 finger white head that settles fairly quickly to a thin cap but leaves some nice lacing.
S: Tart lemons and limes. Fresh cut hay. Complex earthy funk that is difficult to describe.
T: Lightly tart citrus with mostly lemon and lime. Rich earthy barnyard funk.
M: Light and refreshing with a perfect level of carbonation.
O: Excellent wild ale. This is probably not for everyone, but I thoroughly enjoyed it.

Pours a cloudy white gold with a finger of white foam for a moment, then a lasting ring and thin cap for the ride. Looks kinda ugly, but ugly is beautiful with wild ales.
Woaahh heavy doses of hormonal and compost in the aroma, some ripe cheese, and also some lemon-limey (apologies to Barry Labendz) thing going on. Beneath it all hints of earth and floral. Strong aroma that sneaks from the glass and attacks. Highly complex, and strangely awful but alluring.
Strong taste fronted by some real deep hormonal, and just as that peaks some rotting earth and spoiled fruit jump in. The lemon lime character lightens the sip enough to keep it from being disgusting. As it warms the more sweat reminiscent features grow, and the spoilage notes jump out more, but palate adjusts and it ends up to be interesting and pleasing..
Perfect carbonation and refreshingness help rescue a trainwreck of off flavors, and the nicely attenuated feel of this turns this beer into an enjoyable experience.
Disclaimer: I love the deeper and more hormonal flavors brett can throw. This beer is actually an enjoyable visit to wild yeast land, but maybe undrinkable for some folks. Recommended

Mouthfeel: medium-light. Nothing unexpected or exceptional.
Overall: If you want to experience the flavor that this particular Brett strain contributes, you'll get a strong understanding from this beer. As a brewer, I'd never use this Brett strain, but all Brett aficionados should try this beer. I want to submit 2 ratings for this beer: one how bad it is, and the other how worthwhile it is to try this Brett strain. I'm conflicted about how to rate this beer. I did NOT enjoy this beer, but it is a must-try on the "A to Z" Magical Brett Tour, which is exactly how it is marketed. Without trying Trinity's other Brett beers, I'd recommend those over the #4.
