Curious about Brettanomyces? With our 7th Anniversary Project we've developed a series of 7 unique beers with the same base Saison recipe built with amaranth, lemon grass, grains of paradise, and rose hips. Each individual beer within this series is fermented from start to finish with 100% Brettanomyces and aged on French oak Chardonnay barrels. Each beer within this project is fermented with a single unique Brett, showcasing the dramatic diversity of the organism. This recipe is aromatically citrus and sweaty, the palate is very acidic for a Brett beer which transitions to wet goat. A lovely essence of strawberry and mineral are apparent in the finish of this rustic profile.

Very hazy gold. Medium fizz.
Smells sharp: berries and flowers with a bit of dark fruit. Nice.
Tastes... different. Unrefined. Sharp sour brett at the very tip of the tongue is cut into nicely by some floral hops. Then, near the middle, things get more dark-tasting, with nodes of very ripe fruit and some light peat malt. The brett provides a bit of brightness throughout, though, and it finishes with the sharp and spciy yeastiness of a contemporary sasison.
Overall very interesting and good but it's clear this is either an experiment or a one-off, as it lacks the profound balance of their regular offerings.

No freshness/bottling date info. Which would be appreciated for a beer as expensive and boutiquey as this one.

this series is awesome, and they are going to have a really hard time topping it next year. although i think number six might stand as my favorite so far, this is an awesome contribution, especially for a brett strain i am not familiar with in isolation. i think in some ways its more mild than the others, a lot lower on the funk, and so the ingredients of the base beer like rose hips and such are a little more prevalent, which i like. its not without its farmy elements though, its dank and wet, less dry than the others, with fruity berry subtleties to it, which really compliment the base beer expertly. i suspect this is also somewhat of a slower worker, or else its been cold the whole time since its been packaged. it doesnt quite have the depth, but the fruity almost belgian aspects are there. strawberry, watermelon, kiwi even, its pretty cool. carbonated magnificently as most of them have been, i could drink an absolute ton of this beer. now only seeking number two and number four to complete the series. what a trip its been!
