Poured into a tulip.
The appearance was a soft golden crisp yellow color with a fairly quickly dissipating small white head. Barely left any lace, maybe a touch of wispy concave tones.
The aroma, to me, smelled like Granny Smith apples with some crisp dry tart character, subtle lemon and coriander bump the bottom as whiffs of funky fresh yeastiness (somewhat like freshly poured clean cement).
The flavor meshed fine-tuned layers of Granny Smith to Cortland-like apples. Some tartness but meshing with some funk, grass and freshly poured cement. Slight aftertaste of honey coated green apples.
The mouthfeel was about medium bodied, perhaps just a touch under. Sessionability actually felt somewhat there. Dryness breathes through accompanying some grassy tones but isn't distracting. Some dryness in the finish with tart green apple skin.
Overall, seems like a very nice cross between an American wild ale and a saison. I would definitely welcome again!

Poured into a chalice a very nice slightly cloudy, pinkish/orangy color, very nice carbonation, with a very nice thick/foamy/creamy one-finger white head, which also leaves some thick sticky lacing behind. The nose is malty, yeasty, very nice spice note, coriander, peppery, with some nice citrus. The taste is very nice, malty, yeasty, spicy, coriander, citrusy, tart. Medium body, ABV hidden very well, really a pretty complex brew, very nice bitter/dryish finish. Overall, this is a very nice brew, surprised me.

A: The beer is slightly hazy light yellow in color and has a moderate to high amount of visible carbonation. It poured with a finger high dense bright white head that died down, leaving a thin layer of bubbles that mostly covered all of the surface.
S: Faint to light aromas of funk are present in the nose.
T: The taste follows the smell, having more in the way of funk with some hints of spiciness, which I presume must be from the grains of paradise. It finishes with notes of sour apple juice.
M: It feels light- to medium-bodied on the palate and has a moderate amount of carbonation with some bits of dryness in the finish.
O: This beer is easy to drink and has the lighter body you would expect from a saison but drinks a lot more like a wild ale given the funk in the taste.
