2021 vintage; drank 8/7/22 @ Pokemon Communion.
Hazy orange/yellow appearance.
An even pour yielded a nice bright white head; decent lace.
Bacon, honey & fresh flower notes in the nose.
Medium mouthfeel.
Fresh flowers, honey & bacon flavors.
Decadent but easy to drink; a borderline stunner.
I'd love to try this fresh but it held up well for about a year!

this is a few years old now i think, although no date is visible on the little bottle. ears on lots of their labels if i remember right, i dont totally get it, but i trust these guys in this style, and this strong honey saison is excellent, mature in the bottle now, super brett forward but not at all acidic, really unique too, sturdy, autumnal to me, very alive. the bottle starts to slowly gush after i pop the cap, a steady airy stream of overdeveloped bretty bubbles, hard to pour into a glass without it being all foam, airy and peaky and wispy on top of slightly hazy amber liquid, it settles beautifully into half head half liquid in the glass, nice looking. the aroma is majorly funky, farmy and rustic, a brett brux type complexion to me, floral and slightly sweet in the nose still from the honey, but dry at the same time, light woodiness to it, musty wetness, and some light spice in the grain, rye malt present i reckon. the flavor is all of this, farmy for sure, light iodine to the ferment, white wine, flattering oxidation, major brett, no sour. this is majorly old worldy to me, i love the mix grain base, i love the way the honey is still present despite this being bone dry, and i like the alcohol, it has a biere de garde vibe to me at this point of its life, but its not broken down yet or anything. hay, honey, dried flowers, subtle red apple, very harvesty, funked out to the max, delicious. some of the carbonation apparently leaves the liquid on the pour, its not quite as effervescent as it looks like it should be with all the head, like the gas isnt in suspension, but its lighter feeling for what it is still. love the aftertaste here, the brett and the honey and the earthy grain all come together real well. underappreciated, like so much of the trinity stuff, a shame, because this is money. would have loved to try it fresh but its still excellent in this more mature form now.

12oz bottle from Grocery Outlet. Dark amber, cloudy, thick, fluffy head. Savory, yeasty aroma, grassy. Minor notes of honey, lemongrass, zesty, tingly and a lot of the farmhouse yeast. Taste is spot on, but had an extra zippy feel to it.

Look - Pours a cloudy dark orange with an ample white head with cavernous bubbles that begin to slowly fade as quickly as they form. Very little lacing to speak of as I work through the pour.
Smell - Grassy barnyard funk. Momentary whiffs of honey.
Taste - Following the lead of the aroma, this is a grassy and effervescent saison with a large amount of yeasty barnyard funk on the finish along with some clove spiciness. Not sour per se, but a minimal sharpness on the tongue in noticeable. Although not noted on the label, it has tastes that are reminiscent of brettanomyces. Dry finish.
Feel - Light bodied with an abundance of carbonation.
Overall - A delightful farmhouse that increased in complexity throughout the bottle.
