What It Is ... is not a Kölsch. At least not recognizable as such.

Head production is insane, and not in a good way. It's reminiscent of Orval, perhaps even more over the top. Not typically a good sign. The bottom fifth of the can reveals a thick cloudiness. I know this beer is unfiltered, but stylistically, a Kölsch should be crystal clear.

Flavor is off in another manner. There's a hint of salt and a very noticeable citrus-like sourness, with notes of lime and lemon. There is also some estery yeast expression more in line with a Wit than a Kölsch. It doesn't taste unpleasant - working through the glass isn't a chore - but it's not at all what I expect, or want, from the style.

Mouthfeel and aroma are pleasant, and fairly close to style, although it's a bit thicker than I'd prefer. It still drinks crisp and lively enough.

If you're going to claim that you're brewing a particular style, you need to nail that style - and Trinity quite simply does not in this case. There's nothing inherently wrong with taking a base style and innovating, trying something new, but there's no indication that this was their plan. Everything on the label suggests that this is a Kölsch, not a Kölsch-based experiment, and I can't get behind the final result.

Soft, banana yellow body; opaque; thick, white head, foamy and sticky; stringy gobs of foam stick to the glass. Heavy aroma filled with notes of cloves, oats, and slight trace of lemon. Interesting taste; slightly citrus-like; white wine; a bit of grain; very little hop bitterness. Medium body with a light tickle on the palate; juicy in a way, slightly acidic in character.

An interesting take on the kölsch, from its cloudy appearance to the citrus-like notes. Not exactly what I expect from the style, yet delicious none the less.

Poured from a can at fridge temp. Pours a murky, opaque orange with LOTS of white head. Actually took me about 10 minutes to pour the entire can into a glass. So...much...head. Looks amazing! Honey, fresh naval oranges, and wheat scream out to me on the first sniff. A slight funky note (barnyard type) emerges. Crab apples, sour peaches, and a lovely earthy note. Can't wait to take a sip.

The taste generally follows the nose, but doesn't quite reach the same level. Really nice layers of tangerine, wheat, pine needles, oak, vanilla, and a very slight peppery note. Citrus peel is there. Starts relatively sweet and ends on a pretty strong bitter note. Really nice and interesting beer. Tons of flavor for 5.2% ABV. Mouthfeel is dry and fairly light. Long aftertaste.
