Another nice ale from Trinity. Pours a hazy straw color with a silky beige head. Nose has wheaty malts, lime, lemon, jalepeno and Mexican spices. Taste has a citrusy saison base followed by hot peppers and perhaps cilantro and cumin. Crisp body drinks well.

This was a limited batch brewed in celebration of Cinco de Mayo brewed with corn, agave nectar, New Mexico hops, lemon and lime peel, toasted cumin and cilantro.
Bright hazy lemon yellow color with soft powder-like head. Muy bonita! Drapes of foam on the glass and the foam almost seemed to curdle.
Wow! Nose of smell resemble Jalapenos, lime, chili peppers, Habaneros, fresh cracked black and green pepper corns. Eggy when swirled. Also notes of lime and salt. Although, most of these ingredients I listed were not in the beer, it might have been a connection to the Mexican food dishes and the combination of all these ingredients that lead me to believe they were included.
Lemon and lime and wheat yeast up front, jalapeno bite on the tongue when tossed around in the mouth, but disappears instantly, NOT like a jalapeno in a Mexican dish! Cilantro comes through, as does the cumin. A certain buttery nuttiness that is probably the corn. Finishes with a slight green pepper spiciness and jalapeno, very pleasant. The alcohol is kneaded and folded into the beer so that is warms the mouth, throat, stomach and head.
Ultra smooth mouthfeel, like liquid silk, it slides down the throat. Amazingly balanced with yeast, spices, creaminess and texture. Creamy in the mouth, making it feel full bodied. It is a chewer!
This is a world class Mexican/Belgian hybrid of astronomical proportions. Felicidades del Cinco!!!
