A dry French-style saison with big lemon, melon and spice notes. Extended aging on our house brettanomyces cultures lends a subtle funky acidity.

Hazy honey colored beer with two fingers of foam and great retention throughout. Pepper, biscuit, shallot, and orange juice is what I decipher from the nose. Really a nice blend. First sip stings with carb bite and leaves more peppery flavor on the tongue. The yeast takes over here and brings out a world of great flavor; pear and melon, some lemony citrus, more shallot. Awesome saison from Peekskill!
