Popped the cork and poured a bit into my glass and created a fountain of foam. I was warned by the tied on label that this is a highly carbonated brew....
Poured into a grip shaped goblet: color is hazy, thick looking copper with off white head that is made up of fine bubbles; head presents about 1/2 inch thick (after the initial foam over).
Smell is lightly sweet with some biscuit malt, pilsner bread, then some dry yeast qualities with a hint of hop earthiness.
Taste follows the aroma with a hoppy, malty, spicy yeast blend. A bit on the sweeter side for a saison, not quite dry or overly spicy from the fermentation. Hops are a bit more prominent in the flavor with some light citrus rind, herbal and bitter notes.
Mouthfeel is full bodied but low carbonated, starts to dry a bit but still a bit sweet for a saison.
Overall a brew that just needs a bit more attenuation to dry out the malt sweetness and allow the yeast and dry hops to show through.
