A Belgian-style American Tripel brewed on 11/11/11. This very strong pale ale is brewed with a Belgian grains, Belgian candi sugar, French Strisselspalt hops, and American Warrior hops, then fermented with an authentic Trappist yeast.

Swing-top from WBC 2012. Snifter.

A: Appears murky dark orange with almost no head. Just a few bubbles from the force of the pour.

S: Effusive yeast-driven fruit aromatics, redolent of pear and ripe golden apple with a little peach. There's a mild pepper-like spiciness with perfumy floral notes. Toasted malt is evident with some caramel.

T: Sweet bready malts with expressive fruity esters that bring to mind apple, pear, and peach with just a touch of banana. Well hidden alcohol with a mild spiciness. Light caramel presence.

M: Upper medium body with very low carbonation. Smooth and sticky mouthfeel with subtle alcohol warming.

Overall: This is a pretty nice Belgian Tripel that would be improved with a lot more carbonation.
