A Belgian style Tripel inspired by Thai flavors, brewed with kaffir lime leaves, lemongrass, coriander, and ginger. Dangerously easy drinking.

L: Pours a clear golden yellow color with very little head and no lacing on the glass.
S: Very strong kaffir lime smell, maybe a bit of Belgian yeast but mostly lime but a strong ginger too.
T: Very limey and ginger, those two make up the most of the taste, I would like some more of the tripel characteristics to shine through.
F: Medium to large body, smooth carbonation.
O: This beer could use a little less lime and ginger.

Pours a hazy golden/ apricot color with no head. Smells tart and fruity. Maybe some spice. Tastes belgiany, spicy, and herbal. Has a nice balance towards sweet. Medium bodied. It's mostly a smoother belgian golden strong.

Warm gold color body with a slight haze; nice carbonation; relatively thin head. Malty, spicy aroma; cloves and cardamom; slight boozy note. Fine sweetness to the taste; somewhat fruity; nice phenolic bitterness; cloves and nutmeg. Medium-light body; delicate residual sugar feel; mild alcohol dryness on the palate offsetting the sweetness.
Reading the can label, the beer is brewed with kafir lime leaves, lemongrass, and coriander - the 'inspired by Thai flavors' aspect of the brewery. All I know is that this is a fine variant to this style. It fits a lot of the flavor profiles describing a tripel, and this one does it without going overboard. Very nice, very flavorful.
Pouring temperature: 50 °F; canning data: unknown

The beer is a clear, bright gold color with a small white head.
Aroma of citrus fruit and spice.
Taste of lemon, lime, and ginger.
A little too much ginger for me, but that is a minor quibble.
A very nice beer.

Bought two cans from Beer Drop.
What an interesting micro and what a creative tripel !
For starters, I do not think that Trappist monks had this in mind... but I'd expect most would be open to Buddhist monks (or followers) interpreting the Belgian style. And they did a good job.
The first pleasant surprise of Thai Tripel is that their yeast structures the ale so well. While it could have produced more foam and active protein, the yeast still seems to blend the malts and sugars well.
Second surprise, the spices are spot on. Lemongrass, lime leaves and ginger all work together in unison. The test was the Trader Joes Thai Chile Cashews that I ate handfuls of while preparing dinner. The cashews were spicy hot and the Tripel cooled everything off... much like a lager does with spicy foods.
For my brewer review... Spice Trading could well be a treasure. I reviewed and was awed by their gastropub menu. I read the section about their purpose and intent and I am all in. They have a masterful sense of integrating the kitchen and the brew. I should not say more until after I have that second can, courtesy of Beer Drop. Until then, Bravo !
