True to the West Coast style, this silky IPA offers a pronounced resinous bitterness. Dry-hopped to reveal notes of tangerine and coconut. 65 IBU

473 mL can from the LCBO; best before Aug 2 2026 and served barely chilled. Unlike most reviews, I'm not going into this one blind, as I've had at least a half dozen of these over the last couple of months.
Pours a clear golden colour, stirring up an inch of foamy, soapy white head that lasts for the better part of five minutes. Its remnants include a sudsy cap and a generous collar of froth, with a respectable swath of messy lace flung about in the process; looks normal so far. The aroma is nuanced yet understated, offering up hints of tangerine, pineapple, canned peaches and coconut, as well as resiny hops, caramelized malts and pine.
The flavour profile is a tad more blunt: I'm getting caramelized sugars and bready malts, countered by notes of grapefruit, stone fruit and tangerine. More resiny/piney on the back end, with herbal, floral hops and a firm bitterness rounding out the finish; the aftertaste is resiny and citrusy, with a touch of warmth. Medium-full in body, with moderate carbonation and a smooth, slightly slick mouthfeel that works well here. Decent drinkability, unless you dislike bitter IPAs.
Final Grade: 3.77, eking out a B+. St-Ambroise West Coast IPA is a passable take on one of my favourite styles. While I've certainly had more impressive WCIPAs, McAuslan at least has the foundations down pat - it's bitter & resiny, balanced by a sturdy caramelized malt backbone. That being said, it's hard to justify settling for this brew when the competition in this category is so stiff: I mean, this was sitting next to a flat of Fat Tug, and they were basically the same price. It's still one of the better McAuslan IPAs I've reviewed so far - worth a try, though Ontario BAs might want to wait for a fresh shipment.
