Tribble Saison begins with a grist including triticale and wheat, with heavy use of santiam and crystal hops in the kettle. While not excessively bitter, the beer has firm hop aromas and flavors, while underneath lies a subtle yet complex yeast character from the four brettanomyces strains employed for the fermentation. Don't expect a funky brett bomb - the Tribble is simply a well hopped, extra dry saison that shows the versatility of lesser used yeasts.

What a marvelous beer. A clear yellow with a dense, white head with excellent retention and lacing, this looks great. The nose is fantastic - bright, fragrant, layered, grainy, fruity, wonderfully balanced with the grainy wheat pairing nicely with the lemony hops and the almost floral and mildly spicy Brett notes. A touch of yeast is present as well. The palate opens with a truly wonderful hop character, bright and floral, mildly bitter and quite fruity. Lemons, black limes, a little bit of earth to go with a dry and sharp cracker character. Brett is mild here - this isn't a Brett bomb but it does have a delicate but deep complexity to the palate. Drying, hoppy and firm on the finish, this beer feels fantastic on the palate, and overall, is rather remarkably good.
