Red Clay departs from our usual methods of fermenting saisons at moderate temperatures, instead allowing for a swing of 12 degrees all the way to 80 F. The same three house yeast strains were employed here, but their balance shifts dramatically with one specific strain dominating the profile with attractive aromas of clove and other spices, while the flavor shows a pleasant pear note. Named after a classic by Freddie Hubbard.
