Phantom Ghost, a collaborative saison made with upcoming brewery Level Beer, was formulated to be a well balanced brew with herbal and perfumey hops contrasting a fruity yeast strain that generated attractive fresh orange flavors in our most shallow open fermenter. Those perfume and fruity notes may smell sweet but are only an illusion, as the beer finishes quite dry, still maintaining some body thanks to a bit of rolled spelt incorporated into the grist.

On tap at the brewery.
A clear light yellow with a dense, off-white head, this looks great. The nose is pretty excellent. Lightly floral with a blend of jasmine and a little rose, moderately grainy and rustic with some husk and a noticeable spelt character and with a mildly spicy yet perfumey, this is great! There's also a mild citrus note present. The palate, while briskly carbonated, is creamy and smooth, carrying the rich and layered beer, with mild orange notes, a moderate floral note, a delicate spice note (allspice?) and the deep yet dry grainy notes. The spelt flavor is noticeable and harmoniously integrated. Drying, creamy and with the alcohol very well hidden, this went down in a hurry. Excellent.
