a gorgeously delicate saison, as simple and old school as beer gets, but also as refined and drinkable as it gets too, this is dessert island status for me, a near perfectly built mild saison that hits all the marks and is supremely satisfying to me. super pale in color, a frosted light yellow is all, with an inch of frothing thick pure white head from the tap, really soft looking. the yeast is mild here in aroma and flavor, but its also kind of distinct, new to me in a way, not the same old pitch. its lightly belgian, floral, and vibrant, with notes of green tea, elderflower, and honeydew melon to it, combining well with a delicate but distinct hop profile as well, the hallertau blanc is just right for this beer and this yeast profile especially. wheat based, but so light, i would expect a lot of raw wheat, this is fluffy in feel but its also absolutely crackling dry. some bitterness and light yeast spice at the end, round expansive mouthfeel and active but not intense carbonation. herbaceous and clean in the end, somewhat hoppy, european, almost slightly wild too, but no acidity is present at all. mild and mellow beer that will reward the careful appreciator. i adored this beer, and continue to be impressed every time i get to drink beer from upright! this is brilliantly understated, the kind of beer i would be proud to make...

I had this beer on-tap in a stange at Brouwer's Cafe in Seattle.

Appearance: medium golden hue with a moderate haze and a finger of creamy eggshell foam. It's quite nice.

Smell: soft, sweet malt; it's rather wheaty in character. I wonder if any wheat goes into this? It's mild, but nice.

Taste: malty with a mild funk and farmhouse character. There's a bit more biscuity malt character than I typically like, but here it works as a nice counterpoint to the earthier farmhouse elements. It's working for me.

Mouthfeel: medium body with a very well-integrated carbonation and a great creaminess. Kudos!

Overall: this beer isn't remarkable, but it has some great, earthy comfort-food qualities. I like it.
