Saison Ouvrir is the second release of our Frequencies Series of one-off bottle releases. The beer is a collaboration with Luke Taylor of Corralitos Brewing. We met in 2015 when the Craft Brewers Conference was held in Portland and decided to keep in touch after sharing our interests in open fermentation. In late 2016, we visited each other to produce the Saison Ouvrir at both breweries. The base was modeled after a biere de garde but using a true heirloom hop variety resurrected and grown by Luke himself, although in keeping with the spirit of farmhouse style beers they were finished with unique processes. In the version made here at Upright, the base beer was aged in casks inoculated with a souring mixed culture. The beer shows a complex woody and citrus accented hop profile that intertwines with the bold acidity and oak notes.

another winner of a saison from upright, these guys can do no wrong as far as i am concerned. i love this beer, and so did all i shared it with. its got a deeper orange color to it, rust colored really, with a tall and active white head from the 15 dollar bottle. so glad to have upright beers available in the colorado market again! it has a few strands of dark stringy sediment in it, maroon looking, almost like saffron threads, which has me thinking about saffron and then i can see and smell it, although i know there is no saffron (at least i am pretty sure), there is a unique floral richness here that is just so compatible with the somewhat heartier grain base. the funk in the nose is amazing, light bacterial acidity, almost flanders type and vinous, but way more mellow than that. bretty and wild, i get that open fermentation old worldy saison complexity too, i just love these guys for that. i smell sweet orange too, like fresh squeezed juice, the real stuff, but i dont think there is fruit in here either. it gives this a summery and easy drinking vibe, even though it is more substantial than many. good funk and tang together in the taste, with bitter citrus, dried pressed flowers, and something like chamomile. i love this, its earthy and rustic and wild, but insanely drinkable and unique too, the yeast profile is rad, the beer is crisp for its richness, and the quality is radiant. upright is absolutely one of my favorites, this beer is world class!
