Wayfaring Saison is a fun one-off employing a single strain of brettanomyces in the fermentation. The unusual yeast strain developed complex but balanced aromas and flavors ranging from pineapple and guava to dusty pink lemon and green grape. Some barrel aged Saison Vert from December 2016 was blended in also, layering oak and lime notes into the profile while slightly increasing acidity for a bright character, making the beer taste both historic and modern.

A clear light orange with a dense, off-white head with excellent retention and lacing, this looks great. The nose is a riot of Brett notes. Fruity with pineapple and citrus, layered with a little bit of earth, mint, grass and just a touch of clove, there's a lot going on here. Behind this is a blend of melon, grape, straw and floral notes. Incredibly perfumey. The palate opens bright and with a ton of fruity Brett acids - canned pineapple, melon, grape, a mild floral honey, a little bit of petrichor. A delicate spice note, a blend of clove, grains of paradise and white pepper, is present. Light in body, softly carbonated and with a lingering fruity finish, this beer is excellent. Alcohol is well hidden too.
