Collaboration with Superflux Beer Company
Jacaranda was formulated and brewed with Adam Henderson & Matt Kohlen of Superflux Beer Company. They have a taste for beers with strong hop character, so we decided to combine that with our love of saisons to produce a modern take using oil rich varieties.
Jacaranda started as a simple, light, wheat based saison heavily hopped in the kettle, then open fermented with our house yeast blend. The beer was then transferred into a conditioning tank where a portion of Shades, our rainier cherry based beer, was added, accounting for roughly 12% of the volume. To round out the blend and add some depth, the beer was then matured in a mix of vermouth and gewurztraminer casks for two months with brettanoymyces, then bottle conditioned.
Grist: pils, malted wheat, flaked wheat, acidulated
Hops: vic secret, el dorado, columbia

Total yield: 88 cases and 4 kegs

Straight up mothballs. .

A mildly hazy light yellow with a thin, white head with minimal retention or lacing. The nose is a blend of straw, lemony hops, light stone fruit with Rainier cherries, a wet hay funk, a little vanilla, a mild white wine note. As good as this is on the nose, the palate is exceptional. Opening bright, tart, mildly bitter from the hops before a blend of grassy funk, earth, bright cherries ,citron, mild hop oils, straw, this is excellent. A mildly oily mid palate, long finish with a blend of floral notes, cherries, cherry tannins, a little vanilla, a beautiful fruity and mildly mineral like white wine note along with a wisp of citrus vermouth. Light in body, moderately carbonated, this beer is excellent.

My, how this has evolved. The bright hop explosion is replaced by something a little more reserved, a mildly oily, pine like character with a strong leather and mild lemon note. Funky not unlike a mild Iris, if you can imagine that. Sharp, focused if different, this is quite excellent.
