Foundation Ale began as a farmhouse style beer using Skagit Valley barley, wheat, and triticale, along with a big blend of santiam, liberty, crystal, and sladek hops. It spent over six months in a foeder, developing a modern brettanomyces profile, touch of acidity, and light oak notes. We then blended it with an extra young, "alternative" wit that also featured Skagit Valley grains, and dryhopped the blend with Oregon grown strata. Classic Upright - easy but layered, sessionable and satisfying.

A clear light orange wirh a dense, white head with good retention and lacing. This looks great. The nose is initially all dry hop, with a blend of pineapple, weed, pure, clean grapefruit juice and gooseberry, bright and clean with a mild tartness present. The base saison then slowly appears, with a grainy wheat, a mildly peppery note and the clove from the Brett. As it warms, a mildly tropical note from the Brett appears, moderately pineapple like, but complementing the dry hop beautifully. The palate opens qith a soft Brett character, with pineapple and clove with even a little coconut in there. Then, the dry hop flavors with the gooseberry tartness and the sharp dank accent follow and are met by a mild peppery note. The mid palate has a mild grain note, rather raw wheat and cracked wheat like flavors. Drying on the finish with a mild oiliness from the dry hop forming a perfect foil to light tartness from the Brett, this is a remarkably structured beer.
