The name refers to hyssop, a medicinal pant with a minty and bitter character that was added to the kettle. It's also aged on eucalyptus wood staves and bark.

Had this at the Holiday Ale Festival, and must say it was my favorite beer there.
- Nice darker copper color... white fluffy head....
- Smell was very floral, light sweetness.... not at all belgian-like with banana yeast etc... if so it was masked by a blanket of floral and festive goodness.
- The flavor really brought in the season... floral, bit of pine, mint, jasmine... sweet caramel malts... breadiness.... overall crisp, and refreshing, and not super dark.
- Light bodied, not too dry or bitter... just perfect carbonation.
- Super drinkable, and I would love a keg of this at home as a regular. A fantastic beer, and it really caught me off guard.
