Stille Nacht Reserva is a specially matured version of Stille Nacht, aged in wine barrels, for 2 years minimum. This 2019 batch was brewed with Boniface, son of Kris. Barrique (barrel) : 11

This one pours a slightly hazy golden orange, with a fluffy head, and lots of lacing.
This smells like funky peach, candy sugar, fermented honey, orange wine, and tangerine.
I can’t really detail exactly how this differs from the standard Stille Nacht Reserva, but I do know that it’s basically exceptional. There’s a ton of stone fruit – very funky and prickly peach notes, some light vanilla, oakiness, candy sugar, clove, and honey. It’s so complex, but remains super soft, super drinkable, and very pleasantly sour.
It’s light bodied, slightly creamy, lightly carbonated, lightly sour, and extremely drinkable for something as complex as this is.
This really works for me – De Dolle might be my favorite Belgian brewery.
