Two mash tuns, two sparge arms and one boil kettle. Add in 80lbs of grain and 35 gallons of water to achieve 20 gallons of beer. To balance it out, 175 IBUs. No question, this is an absolutely insane way to make a beer. It took all day, but we love the result.

Bottled 9/8/2010 Batch one
Pours a solid black color with a smallish khaki head that shows moderate retention and minimal lace. Smells of tart pitted fruit, roasted grains, chalk, hints of earthy hops, alcohol, caramel and chocolate. Odd combination of smells wafting from my glass, but I should be used to that after these past few years of White Birchin' it. The taste is much better than I would have imagined based on the aroma. Thick milk chocolate and coffee with hints of tart berries with a bit of earthy hops as well as a touch of ethanol. Thick viscous body with a creamy mouthfeel and a light level of carbonation. The longer I let this sit the better the aroma gets, but it was weird at first. This tastes pretty damn good after a year, but I think it was better fresh. Nice Stout, too bad it was my last bottle.

Had this as part of the infamous White Birch tasting at the Holistic Dramming Institute, thanks to Tim. Notes will probably be short since there were so many different beers to note, and drink.

This was a great crazy stout! Batch One.

Super dark thick color with a light brown head covering.

Nose is loaded with roast, black patent malt, some coffee and espresso, plenty of earthy hops.

Taste brings a lot more dark malts, plenty of roast again, chewy malts, some vanilla, caramel, light oatmeal, a little creamy, smooth, and plenty of earthy hops again, giving it a decent bitterness. A dry finish, with a bit of chocolate coming out and a long bitter slightly sticky finish. A bit of booze but not 12% as it is hidden pretty well.

Mouth is fairly thick, creamy and smooth, and decent carbonation.

Drink is decent, a lot less booze than it should, and a decent dry finish, but a bit of stickiness, and plenty of bitter hops.
