This beer was aged in a barrel specially made with birchwood. How cool is that!
a: This was a bright, clear golden color. It poured with a massive, uneven, whipped cream head that faded to huge clumps.
s: The effect of the barrel seems subtle but very intriguing. I found lots of warm, fruity Belgian yeast and soft, sweet candy. Along with that though, was a hint of wintergreen and some earthy "woodiness".
t: Here as well, I found beer first and barrel second. Warm, yeaty esters that suggested fruit and a nice peppery spice that was joined by some faintly musty wood at the finish. Overlapping everything was just a little wintergreen.
m: Full bodied, creamy, and effervescent.
o: The term barrel aged evokes certain expectations. They won't be met here. This is a completely different animal. The birchwood adds a subtle yet very distinct element to this offering. Awesome effort and very cool creativity from White Birch.

Picked up at the brewery a corked and caged 750ml bottle filled on July 25,2011 Batch one. This beer was served directly out of the white birch barrel it was aged in at the White Birch beer fest in July, and apparently some bottles were also produced.
Huge pop from the uncorking procedure, the most difficult bottles ever to be uncorked come from Hooksett NH. Wow this one is difficult to pour but comes out a slightly hazy golden straw color with more head than beer in the glass on my first pouring attempt. Smells of yeasty Belgian esters, some citrus in the form of lemon and pineapple, and a faint menthol wintergreen aroma that I assume is the birch wood contribution. Taste is a strange mix of lemon, pineapple, wintergreen, phenolics and yeast. Very dry finish. Medium to light body with an enormous level of carbonation and a tart watery mouthfeel. Interesting mix of flavors, definitely outside the box, I think a bit of body and some residual sweetness could do wonders for this brew, but as is its a bit muddled.

From bottle no. 57 of 101 bottled on July 25, 2011. Sampled on December 13, 2011. This beer is only available at the brewery's retail store in Hooksett, N.H. It came in a 25 ounce, caged, corked bottle that poured golden yellow, cloudy and milky, with a fizzy head. The aroma had a nice dose of malts, yeast, citrus, and yeast with a sour hoppy bite in there as well. The body falls into the medium range and its consistancy seems to be good. It has a malty, yeasty, and pineapple like taste but all in all it is subtle and laid back. There is definitely a stinging sour hop bite at the end. Overall a nice beer.
