Bottle 2 of 24 from White Birch
After wrestling the cork out I poured a deep dark brown beer with faint garnet highlights and a good sized tan head that persists for quite a while. The aroma doesn't scream wild ale for me. I get an ashy chocolate and caramel maltiness with hint of sweet and tart fruits. There is maybe a hint of lactic sourness in the aroma. The flavor is sweet and tart fruits against a backdrop of earthy almost salty caramel and brown sugar. There is a touch of funk and a hint of lactic acid here but the wild is a bit restrained. Light to medium body with a light to moderate level of carbonation and a slick tart ashy mouthfeel. Decent beer but honestly too light on the wild ale for me.
