Stopped in at Everybody's on the way back from Coeur d'Alene ID and had food and drinks. Very nice Belgian that was clean and not overly strong on the yeast flavor. Was strong but didn't taste like it. Nice fruit flavor, I couldn't quite place it though. They told me it was pear. 32 IBUs Rated 11-18-2023

they had all kinds of different beers on the menu in here when we were in, and this traditional belgian style was quite well executed. the yeast is real familiar, but its tame here, not overly estery or dominant in the nose or the flavor, some pear and white wine notes as is common, a little allspice and peppery character as well, light metallic character which is permissible here, and some serious sweetness through most of it. hints of sticky floral honey, rock candy, and toffee to it, it could be a little drier and as such more drinkable, but i think this is squarely within what we should expect from the style, especially from an american brewer, where this is no special house belgian strain on display, its technically solid, bubbly, and a little fancy feeling. lots of body, very much a slow sipper, and it warms up well, the yeast staying somewhat mellow. hints of cotton candy, elderflower, and orange at the apex, sugary all the way through, not as complex as the best of them, but this is a very well crafted beer, and the alcohol hardly shows up at all, even at temperature. im pretty high on these guys after visiting their brewery!
